As I wrote last week, I’m trying to purposefully incorporate more raw food meals into my menu. Today for lunch I tried a ribbon asparagus salad (a simpler take on this one found on Smitten Kitchen).
I just used a peeler on a couple of raw asparagus stalks, then spritz the ribbons with olive oil, squeezed on a little bit of lemon juice, and added some pepper and salad. It certainly wasn’t the best thing I’ve ever tasted, and admittedly I had to force myself to finish the last few bites. But I decided that I have to come to terms with the fact that not everything will taste awesome initially, I just need to get used to the “grass” taste.
